What to Expect Before Delivery

Commercial gas convection ovens require advance planning to ensure safe installation, proper ventilation, and reliable performance. Before your unit arrives, please review the following preparation steps carefully.

Delivery and handling

  • Commercial convection ovens are shipped via LTL freight and are heavy. Plan ahead for safe movement from the delivery location to the installation site.
  • Depending on access, the unit may need to be uncrated before moving indoors. Ensure adequate manpower or material handling equipment is available to move the oven safely without damaging floors, doorways, or the equipment.
  • If you require a liftgate or other special delivery accommodations, note this in your order comments. Additional charges may apply depending on carrier requirements.

Installation location and support surface

  • Confirm the installation area provides sufficient space for the oven footprint, door swing, service access, and airflow.
  • Verify the floor or stand is level and capable of supporting the full operating weight of the oven. Double deck models are significantly heavier and require special attention to floor loading.
  • Ensure adequate clearance is maintained from combustible and non-combustible surfaces as required by local codes and manufacturer guidelines.
  • Allow space for future cleaning, maintenance, and service access.

Ventilation requirements

  • Gas convection ovens generate heat and combustion byproducts and typically require installation under a properly sized commercial ventilation hood.
  • Ventilation systems must comply with all applicable local codes and regulations, including fire suppression requirements where required.
  • Confirm sufficient make-up air is available to replace exhausted air and support proper burner operation.
  • Avoid drafts from HVAC vents, fans, or open doors that could disrupt airflow or burner performance.

Gas and utility preparation

  • Confirm the gas supply type matches the oven configuration ordered (natural gas or LP gas).
  • Ensure gas supply capacity, connection location, and shutoff valve placement meet installation requirements.
  • Gas connections and pressure regulation must comply with all applicable codes and manufacturer specifications.
  • Plan for professional leak testing after installation using approved methods.

Electrical considerations

  • Convection ovens require an electrical connection for controls and fan operation.
  • Verify the electrical supply matches the voltage and requirements listed in the specification sheet or user manual.
  • Electrical connections must comply with local electrical codes.

Professional installation

  • Commercial gas convection ovens should be installed by a qualified technician or licensed tradesperson.
  • Proper installation is critical for safety, performance, code compliance, and warranty coverage.

Preparing these items in advance helps prevent installation delays, protects your equipment, and ensures consistent cooking performance from day one.

Upon Delivery

Careful inspection at the time of delivery is essential to protect your equipment and ensure any freight issues can be resolved quickly.

Inspect before signing

  • Inspect the packaging thoroughly before signing the delivery receipt.
  • Look for visible signs of damage such as dents, crushed corners, punctures, or evidence of mishandling.
  • If visible damage is present and you are not willing to accept the shipment, refuse delivery and clearly note the reason on the Bill of Lading (BoL).

Note damage on the delivery receipt

  • If you choose to accept delivery with visible damage, all damage must be clearly documented on the BoL before signing.
  • General statements such as “subject to inspection” are not sufficient for freight claims.
  • Take clear photos of the packaging and any visible damage at the time of delivery. This documentation helps us assist you efficiently if a freight claim is required.

Uncrating and concealed damage

  • After delivery, carefully remove all packaging and inspect the oven thoroughly, including doors, control panels, interior surfaces, and flue areas.
  • If concealed damage is discovered after uncrating, contact Noriota immediately. Freight carriers enforce strict timelines for reporting concealed damage.
  • Take clear photos of the damage, the packaging, and the product identification label. Providing complete documentation helps us work with the carrier on your behalf.

Before installation

  • Do not install or operate the convection oven if shipping damage is present.
  • Retain all packaging materials until the unit has been fully inspected and confirmed to be free of damage.

Prompt inspection and clear documentation allow us to support you quickly and minimize delays to installation or operation.
